Calamari Caesar Salad
Ingredients:
- 6 lbs. Sea Watch Italian Breaded Calamari - prepare according to package directions
- 6 lbs. Romaine Lettuce, leaves torn
- 4½ lbs. Cherry Tomatoes, halved
- 6lbs. Cucumbers, seeded and sliced
- 1½ lbs Red Onion, thinly sliced
- 2½ cups Classic Caesar Dressing
- 9 oz. Parmesan Cheese, grated
- 8 Lemons, cut into wedges
Method:
- For each salad: toss 2 cups lettuce, ½ cup tomato halves, ½ cup cucumber pieces and 3 tbsp. red onion slices with 3 tbsp. dressing; mix to coat well.
- Arrange on top of chilled dinner plate or in large salad bowl.
- Top each salad with 4 oz. prepared calamari.
- Sprinkle the top of each salad with 2 tbsp. Parmesan cheese and serve accompanied with 4 lemon wedges.
