Ceviche

No matter whether you are North of the boarder or South, this refreshing recipe will make you feel like you are on vacation. This convertible recipe allows you to serve a classic ceviche or add tomato juice for a traditional Baja Clam Cocktail, Tequila not included.

Instructions

Mix all ingredients except the popcorn together in a glass bowl and chill for one hour. Remove from refrigerator and mix again. Serve 6 ounces in a small dish with a cup of popcorn on the side. Popcorn is added to the ceviche a few kernels at a time to add crunch and texture.

Clam Gazpacho:
1 46 ounce bottle of Tomato Juice
Add the tomato juice to the ceviche recipe less the popcorn and chill.
Serves 15 8 ounce servings

Ingredients

  • 1 51 oz. can Sea Watch Chopped Sea Clams (drain juice and reserve)
  • 1 cup of clam juice
  • 4 cups of diced and seeded Tomatoes
  • 1 small Red Onion finely chopped
  • 3 Limes juiced
  • 1 Avocados (diced)
  • ½ cup finely chopped Yellow Bell Pepper
  • Hot sauce to taste
  • 12 cups of cooked Popcorn (sprinkle lightly with paprika for color)
