Clam Strip Fajita Wrap
Ingredients:
- 12 4 0z. bags Sea Watch Clam Strips, prepared according to package directions
- 1 cup fajita seasoning
- 1 head iceberg lettuce, shredded
- 2 cups tomatoes, diced
- 2 cups Monterey Jack cheese, shredded
- 12 12" flour tortillas, baked 2-3 minutes or warmed on a flat griddle for 15 seconds
Preparation:
- Lay each warmed tortilla on a clean work surface.
- Sprinkle tortilla with fajita seasoning and cheese.
- Layer lettuce and tomatoes over each tortilla.
- Top each tortilla with 4 oz. of prepared clam strips.
- Fold ends of tortilla, roll and wrap.
Yield: 12 servings
