Clam Pinwheels

  1. Lay the super surfers on a cutting board one by one.
  2. Slice the roasted red peppers half the thickness of the super surfers.
  3. Line the pepper between two super surfers and roll them together on their side like a pin wheel.
  4. Slide the skewer through the pinwheel and repeat process.
  5. Place 2 pinwheels on a skewer, smaller pieces can be combined to make a single pinwheel.
  6. Lightly brush with olive oil and place skewers on a hot flat top grill or char broiler, turning once until fully cooked. (One to two minutes per side.)
  7. Garnish the skewers with fresh pesto sauce.
