Clam Pinwheels
- 1 lb Sea Watch Raw Super Surfer Clam Strips
- 1 Small jar Roasted Red Peppers
- 1 Cup Fresh Pesto Sauce
- 8 Small Bamboo Skewers, soaked in water
- Lay the super surfers on a cutting board one by one.
- Slice the roasted red peppers half the thickness of the super surfers.
- Line the pepper between two super surfers and roll them together on their side like a pin wheel.
- Slide the skewer through the pinwheel and repeat process.
- Place 2 pinwheels on a skewer, smaller pieces can be combined to make a single pinwheel.
- Lightly brush with olive oil and place skewers on a hot flat top grill or char broiler, turning once until fully cooked. (One to two minutes per side.)
- Garnish the skewers with fresh pesto sauce.
