Clam Puffs

Ingredients: Puff Mixture:
  1. Sauté onion and celery until transparent.
  2. Drain off liquid.
  3. In a large bowl, combine clams and juice, celery, onion, lemon juice, parsley, spices, cream, 2 eggs, and 2 cups of breadcrumbs.
  4. Chill for 1 hour.
Egg Coating:
  1. Combine remaining eggs and 1 cup milk, blend together.
  2. Form puff mixture into silver dollar size balls.
  3. Roll in flour; dip into egg mixture, coat with remaining breadcrumbs.
  4. Deep fry for approximately 10 minutes at 350ºF. Serve warm.
