Clam & Potato Skillet Dinner

Ingredients: Preparation:
  1. Melt butter in large skillet over medium heat and sauté potatoes until they begin to soften but are still firm.
  2. Add peppers and cook for 2-3 minutes.
  3. Then add onions and sauté until onions are translucent.
  4. In saucepot, add broth to the flour and blend thoroughly.
  5. Allow mixture to simmer for a moment, then stir in half and half.
  6. Add black pepper to taste and add this mixture to the skillet.
  7. Add clams. Simmer uncovered until mixture is thick, about 10 minutes.
  8. Stir occasionally.
  9. Sprinkle with cheese.
  10. Let stand 5 minutes, or until cheese melts.
Yield: 12 servings
