Clam & Potato Skillet Dinner
Ingredients:
- 2 1 lb. bags Sea Watch IQF Chopped Surf Clams
- 8 cups potatoes, peeled and chopped
- 2 cups red onion, peeled and chopped
- 2 cups red pepper, chopped
- 2 cups cheddar cheese, shredded
- 1 cup half & half
- ½ cup clam broth
- 4 tbsp. butter
- 4 tbsp. flour
- ½ black pepper, ground
Preparation:
- Melt butter in large skillet over medium heat and sauté potatoes until they begin to soften but are still firm.
- Add peppers and cook for 2-3 minutes.
- Then add onions and sauté until onions are translucent.
- In saucepot, add broth to the flour and blend thoroughly.
- Allow mixture to simmer for a moment, then stir in half and half.
- Add black pepper to taste and add this mixture to the skillet.
- Add clams. Simmer uncovered until mixture is thick, about 10 minutes.
- Stir occasionally.
- Sprinkle with cheese.
- Let stand 5 minutes, or until cheese melts.
Yield: 12 servings
